When I was at Walmart the other day (all good stories start like this right!?) I discovered an amazing thing. Key Lime and Lemon Meringue Marshmallows! What!? I knew I needed to buy them on the spot and decided to come up with a really simple and easy Spring Treat using them. I've combined two loves: marshmallows and chocolate, and created some really cute Spring Lemon & Lime Marshmallow Pops!
And can I tell you how pleasantly surprised I was with these marshmallows. I was half expecting an overly sweet barely citrus flavored marshmallow. Oh no. These are chock full of almost-make-your-eyes-water tart citrus taste! Which is just how I like it people! Oh yum!
So dipping these tart marshmallows into a white chocolate adds a nice sweet touch to counterbalance the tangy lemon and lime marshmallows. It is a match made in heaven!
After I dipped the one end in chocolate I covered liberally with sprinkles.
I love the bright spring colors and the bright spring taste of these cute lemon meringue and key lime chocolate covered marshmallows!

I haven't seen any lemon or lime marshmallow's, but I'm going to be keeping me eye out! I love citrus flavored food. They look so springy with the chocolate and sprinkles!
