Can I be honest with you for a moment?  I am still struggling to get back into a routine after the last month of craziness.  Some days I am a rockin' it and I get my whole to-do list done and other days I can't seem to accomplish a thing.  Between life, family, kids' homework, ballet class, church commitments and the holidays, life is just plain crazy!  And once in a while I forget about dinner.  Oh.  Wait.  That used to happen before...hm...
Well, in an effort to be sure I feed my family something other then pancakes and pizza every night I am always on the look out for yummy and simple Crock Pot recipes.  3pm-5pm at my house is CRA.ZY and if I can throw something into my crock pot in the morning, my family is much more likely to be fed a yummy meal!  Which is why I was absolutely THRILLED to find out about eMeals and their Crock Pot meal plans!  
I had heard about eMeals on the radio before and it sounded like a great concept, but I never looked into it to be honest.  So I was excited when I received the opportunity to try out eMeals, and I knew that the crock pot meal plan was the one I wanted to try!

eMeals is a menu and grocery list service that is like none other.  Once a week you get a full dinner menu plan (lunch and breakfast can be added too) sent to your inbox.  This plan includes a main dish plus a side, has the ingredient list, the directions and the entire grocery shopping list with an estimated budget that you can print off and take to your local grocery store with you!  How cool is that!?

And since I was looking to expand my dinner meals, especially in the crock pot category, I was so excited to see what would be on the menu for this week!

One of the dishes on the menu that immediately caught my eye was a Spinach Alfredo Ravioli with Tomato-Herb Bread Salad meal.  Yum!  It looked simple and tasty and didn't take a lot of prep time!  So I couldn't wait to try it out!

Spinach Alfredo Ravioli

Ingredients

  • (1) 10 oz package frozen chopped Spinach, thawed
  • (2) 16 oz jars Alfredo sauce
  • (1) 25 oz package frozen cheese Ravioli

Directions

  1. Press spinach between paper towels to drain.
  2. Spread 1 jar of Alfredo sauce in bottom of a 5-7 qt slow cooker.
  3. Layer Ravioli and spinach over sauce.
  4. Spread remaining jar of Alfredo sauce over spinach.
  5. Add 1 cup water over sauce.
  6. Cover and cook on Low for 4-5 hours

Tomato-Herb Bread Salad

Ingredients

  • 3 cups French bread cubes
  • 6 Tbs olive oil, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon pepper, divided
  • 1 pint cherry tomatoes, cut in half
  • 3 Tbs balsamic vinegar
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fresh parsley

To be honest, I did a few things differently.  I halved the ravioli recipe because I knew that would be way too much food for my family.  And instead of fresh herbs, I used dried.

And honestly, this meal was an absolute HIT with my family!  My daughter was begging for seconds and my husband went back for at least thirds!  The whole crock pot was empty before I knew it!  Whoa...that almost never happens!  It was a big success and my husband told me multiple times that he really liked it!  Wahoo!

And we liked the Tomato-Herb Bread Salad as well!  The olive oil and balsamic vinegar dressing was just perfect for the toasted bread cubes and tomatoes!  Yum yum yum!
