Zucchini Donuts with babycakes Donut Maker

Yesterday I told you how in love with Select Brand's babycakes Donut Maker I am!  I also shared a Pumpkin Donut recipe with you that is delish!  You can read all about it here.

Today, I want to share another recipe with you that I created for the babycakes Donut Maker.  And it is actually pretty healthy too!  Zucchini Donuts!

Zucchini what!?!?!

Zucchini Donuts.  Well, they are much like a zucchini muffin, but in donut form.  And in my humble experience, things in the shape of donuts tend to be eaten ravenously by my children!

And this recipe is jam packed full of healthy ingredients so you can be fairly guilt-free when you kids eat 8 of them in one sitting.

Zucchini Donuts

Ingredients for Donuts:

  • ¾ c whole wheat flour
  • ½ c white flour
  • ¼ c flaxseed (ground)
  • ⅓ c brown sugar (packed)
  • 1 t orange zest
  • ¾ t ground cinnamon
  • ½ t salt
  • 2 t baking powder
  • ½ t baking soda
  • 1 ⅓ c zucchini and/or yellow squash, grated (this is approximately 1 ½ average sized zucchinis)
  • ½ c plain, vanilla or greek yogurt
  • 2 eggs
  • 2 T honey
Ingredients for Glaze:
  • ½ T milk
  • 4 T powdered sugar
Directions:
  1. Mix all dry ingredients together
  2. Puree the zucchini
  3. In a separate bowl, combine all wet ingredients including the zucchini and mix until fully incorporated
  4. Add the wet ingredients into the dry ingredients and combine until moist
  5. Place a large ziploc bag into a tall glass, fill with batter, cut off tip and fill the preheated babycakes Donut Maker donut crevices with batter
  6. Bake 3-5 minutes or until golden browned and fully cooked
  7. Let fully cook on a rack
  8. Mix glaze and dip tops of cooled donuts into glaze if desired

 As you can see by this photo, the batter is quite thick.  I filled each bottom crevice completely with batter.

I love how perfect all my donuts were using the babycakes Donut Maker!  Aren't they just picture perfect!

My son could not get enough of these donuts!  He kept sneaking over, reaching up on his tippy toes and grabbing another donut to eat!!  He was moving so fast, all I could get were blurry photos of him!

Oh yes...and here he is trying to shove the entire donut in his mouth while avoiding all eye contact with me.

What is so funny is that he thought he was getting away with eating a ton of yummy treats, but really, they have so many healthy ingredients, I didn't mind how many he ate!  (He was sneaking them before the icing was even put on!)

But.  Here is my disclaimer.  If you leave these sitting around unattended, put a sign next to them so everyone knows they are Zucchini Donuts.  My husband came home, grabbed one to eat, and then accused me of trying to sneak vegetables into his food!  I believe his exact words were (seeing minuscule green flecks in the donuts), "Did you put broccoli in donuts?!?!  Are you trying to sneak healthy vegetables into donuts!?!?"

Please note that I rarely try to sneak vegetables into normal every day foods.  So I am not sure why he thought I was trying to pull a fast one on him!

I replied, trying not to laugh, "No.  I am not.  They are called Zucchini Donuts, that is zucchini in there, not broccoli.  And I am not trying to sneak anything in there.  They are called Zucchini donuts."

Of course, I did not tell him they also had whole wheat flour and flaxseed in them 🙂  So he did get a few extra healthy things in there 🙂  But that can be our little secret!  Bwahaha!

Silly boy!

My daughter who claims to not like zucchini helped me make these.  She then proceeded to eat a ton of them even though she knew there was zucchini in them.  So I am pretty sure I can call this a big success!
