Red Velvet Cheesecake Cookies

Don't these look amazing!?!? They look like cookies you would buy at a specialty bakery.

Amazingly, I made them. Seriously. And they were super easy. And super yummy! (my only disclaimer is that you have to allow time for the cookie dough cool before you bake them, so plan ahead!)

I have slowly grown to enjoy Red Velvet. But Red Velvet Cookies stuffed with a Cheesecake like filling?!?!

Yumm-o!!

Red Velvet Cheesecake Cookies

(I found the original recipe at Two Peas and Their Pod, but modified it slightly.)

Ingredients for the cookies:

  • Red Velvet cake mix box
  • 2 Tbs flour
  • 2 eggs
  • ½ cup veggie or canola oil
  • 1.5 teaspoon vanilla extract
Ingredients for the filling:
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1.5 teaspoon vanilla extract
Ingredients for topping:
  • white chocolate chips
Directions:
  1. For the cookies, combine cake mix and flour in a bowl and whisk until clumps disappear.
  2. In a stand mixer, combine cake mix/flour mixture, eggs, oil and vanilla and mix until smooth.
  3. Dough will be oily.
  4. Wrap dough in plastic wrap and refrigerate for at least 2 hours.
  5. For the cheesecake filling, mix the cream cheese, powdered sugar and vanilla in a stand mixer until smooth.
  6. Using ½ teaspoon, scoop out cheesecake filling and roll into balls until you have about 20-22. Place on a plate and put in the freezer for at least 2 hours.
  7. Preheat oven to 350 degrees and line cookie sheets with parchment paper.
  8. Take ⅛ cup cookie dough and flatten in your hands.
  9. Place a filling ball on the dough and gently wrap dough around the filling. Roll into a ball carefully.
  10. Place 4 cookies on a cookie sheet (these make large cookies) and bake for 11-13 minutes. Cookie will begin to crackle when they are done.
  11. Let cookies cool on baking sheet for a while then transfer to a cooling rack to cool completely.
  12. Melt white chocolate chips and drizzle on cookies.
  13. Let chocolate set and enjoy!

This recipe makes about 20 cookies.

I have never seen a recipe like this one, Ashley! It looks decadent. And, just as word of advice, I would go into my comments and send the one above into the spam file so that particular UNKNOWN does not become a permanent visitor. xo Diana

I plan on baking these for a red and white baby shower I am hosting next weekend. I will do a practice run this weekend and I am keeping my fingers crossed and hoping they turn out well. Should these stored in the fridge once they are ready or room temperature will be fine, can you please advice. Thank you

Sounds like a delicious plan James and Meenakshi!

Mine didn't last long enough to worry about storing...but I would say it is a personal preference thing and how long they will be out for. The center does have cream cheese in it so it will be ok out for a little while, but not for too long 🙂 It's similar to a cream cheese icing. It will be ok for a couple days in my

Thank you Ashley for your response. I tried these last weekend. I don't have a stand mixer so I used my electric mixer and my hand. The cookies turned out great :).
I messed up the icing part. The drizzling was most d difficult part for me. The icing was not clumpy, it was very thick though. can you please give me tips to improve my icing.

Thanks for your help.
You are

      My pleasure Meena!

I am so glad the hand mixer worked well for you!

Chocolate can be tricky. I would first start by checking out my blog post on how to melt chocolate for dipping. The same principles apply to melting chocolate for drizzling 🙂 Here is a link to the blog post: http://www.simplydesigning.net/2011/02/how-to-melt-chocolate-for-dipping.html

The
