Thai Sweet Chili Stir Fry

I grew up eating a variety of foods and when I go out to eat I love to try different types of ethnic foods.  But my all-time favorite ethnic food is Thai.  I love Thai food.  I've mastered a killer Thai Curry and tonight I decided that I wanted to give my hand at a simple Sweet Chili Stir Fry.  And boy was it tasty!

I can only sort of call this a "recipe" though because I did use a pre-made sauce.  So it is easy, and simple and tasty but not totally from scratch.  But I did come up with this recipe by myself so even though it is really simple, it is all my own creation.  
This recipe goes together so quickly that instead of a traditional rice, I decided to pair it with Brown Minute Rice instead.  I have never tried their brown rice before and I was pleasantly surprised with it's nice, nutty flavor.  And I also did not complain that it only took about 10 minutes to cook so it was ready when my stir fry was ready.  (Minute Rice White Rice cooks even faster in only 5 minutes.)  We love pairing many of our meals with a side of rice.
And I hope you enjoy it as much as my family did!  My husband loved it and my kids gobbled it down too.  And for how quick it was to throw together, it is definitely on my menu list.
Thai Sweet Chili Stir Fry
Serves approx. 2-3 adults (we fed 2 adults and 2 children perfectly)
Ingredients
  • 2 chicken breasts, cut into bite sized pieces
  • Shredded carrots
  • Cilantro
  • Thai Sweet Chili Sauce  (Mae Poy), approx ½ bottle
  • Olive or veggie oil  (1-2 tbs)
  • Salt and Pepper
  • Minute Rice, Brown Rice
Directions
  1. Cook rice according to directions
  2. Season raw, cut chicken with salt and pepper.
  3. Cook cut chicken in oil over stove until completely cooked.
  4. Add shredded carrots and sweet chili sauce to pan and cook until warmed
  5. Garnish with cilantro
  6. Serve over rice
