Thin Mints - Update!!

Ok.  So I finally finished my Thin Mints!  And in the words of my 3 year old daughter, "They look SO beautiful!" 

They look beautiful and yummy!  And, they taste yummy too! 

Mine are still a bit soft so I think I will store them in the fridge to keep the chocolate a bit harder.

Oh.  And in case you are wondering, perhaps I made my cookies a bit small in diameter, but I ended up with 110 cookies!  Oh wow!  What ever will I do with 110 cookies!  (Besides NOT lose that baby weight. 🙂

My only issue was that I ran out of chocolate before they were all coated in chocolate (I used an entire box of baking chocolate!).  So, not to let anyone down and keeping with my St. Patrick's Day theme, I decided to coat the remaining cookies in left over green chocolate.  (I added peppermint extract and shortening to the melting chocolate to get the right consistancy.)  I hope they taste as good as they look!

    Fun idea! Back at Christmas, I made something called Thin Mints out of chocolate, ritz crackers, and peppermint.
