I usually cook dinner from scratch.  Usually.  And don't get me wrong, I take short cuts, and keep things as simple as possible.  And there are not always vegetables on our plates.  But my family really loves home cooked meals so I strive to do that most nights! 

Since I cook 5-6 days per week, I love to try new recipes.  But one of our family favorite go-to recipes is a delicious Thai Chicken Curry!


We love Thai food and a good chicken curry recipe is simply one of our favorite meals ever!  So today I want to share with you a really simple and tasty Red Curry dish!

Red Thai Chicken Curry

Ingredients

  • 2 tablespoon vegetable oil
  • 1.5 tablespoon red curry paste (depending on taste)
  • 1 can coconut milk
  • 2 chicken breasts, sliced
  • 3 tablespoon Fish Sauce
  • 3.5 tablespoon Sugar
  • 1 zucchini or squash
  • 3-5  carrots, peeled and sliced

Directions

  1. Put vegetable oil and curry paste in a pan on the stove and stir-fry over medium heat for 2-3 minutes.
  2. Add ⅓ can of coconut milk and stir-fry 4-5 minutes until it is bubbly and darker red.
  3. Add chicken slices and stir-fry about 5-8 minutes, until chicken is cooked thoroughly.
  4. Add the rest of the coconut milk plus ½ can of water
  5. Add vegetables, fish sauce and sugar.
  6. Simmer for 20-30 minutes.
  7. If sauce gets too thick, add a little water.  If it's too thin, simmer it a bit longer to thicken.
  8. Remove from heat and serve over rice!  

We always eat this over rice!  It is tasty, full of rich flavors, spicy but not too spicy that my kids can't eat it!

We typically serve this over Jasmine Rice that I cook in my rice cooker, however because this recipe is a bit labor intensive (lots of cutting and slicing...ok...that's labor intensive for me 🙂 sometimes I forget to start my rice cooker in time!

So this time we made it, we decided to try Success Rice.  Success Rice is the original boil-in-the-bag rice.  I have never ever tried boil in the bag rice before so I wasn't sure what to expect!

The great news is that it is really easy to make!  (Easier then cooking rice on the stove in my opinion.) And it doesn't take very long either which is great if you are on a time crunch!  There is no measuring, no mess and it cooks in about 10 minutes.  And for boil-in-the-bag rice, it wasn't too bad.  I could only find white rice available at my local store, but I would be interested to try the basmati or Jasmine rice as those tend to be more flavorful rices then white rice.  One of my dislikes is more of a personal preference thing, I don't typically make minute rice or boil-in-a-bag rice, so we are used to a bit of a different texture of rice in our house.  And I wish I could have found basmati or jasmine rice since we tend to prefer those types of rice over white rice.  But for nights where there is not a lot of time or you need a low-mess option, Success Rice is definitely a simple to cook rice option.

    Mmmm! I LOVE curry with a passion! I could live on it if I had to 🙂 Out of curiousity, what kind of curry paste do you use (brand etc.)?

      Lori,<br /><br />I like to use Mae Ploy is possible. I can usually find it at a local Asian market.<br /><br />I have found that all curry&#39;s have different &quot;heat&quot; to them so it always takes me a bit of trial to get the hotness right if I end up with a different brand :)<br /><br />Have a lovely day!<br />Ashley
