A couple of weeks ago, my mom and I pulled up at the grocery store to buy one thing.  I was going to stay in the car with my daughter while my mom ran inside, but then I saw them.  Two cute little girl scouts selling girl scout cookies outside the grocery store. 

So I obviously had to get out of the car and I went and bought 3 boxes of girl scout cookies.  How could I resist!?!? 

But when did they get so expensive?  $4.00 a box?  Ouch!  I know it will date me, but I think I used to sell them for $2.00 or $2.50 a box...oh well.  Point is, I love girl scout cookies and that $12.00 I spent was SO worth every penny!

Then, a wonderful reader, Paisley and Polka Dots, shared her recipe for Thin Mints at a link party I had a few weeks back.  Oh yum! 

I had hoped to have finished making mine before I posted this, but, alas, mine are still in progress!

Then, whip up a batch of thin mint cookies and tell me how they turn out!

    Thanks for featuring my cookies Ashley!! This was so sweet! Alright, so I'm waiting to hear- how did they turn out? They aren't the real thing that you just bought (I agree, $4 is rediculous), but they are the next best thing!!

    hmmm- I might have to try this one out! I looooove thin mints!!!!!I made some thin mint taste alikes for Christmas... ritz crackers dipped in a mix of chocolate and mint flavoring. Now that was easy!

    Katie - They turned out yummy! I posted an update about my cookies! Thanks for the great idea! Now if only I could figure out how to make the Samoa girl scout cookies!

    Amy - The ritz cracker idea sounds good. I have a similar recipe, but not mint, using saltines...I should pull it out! They are yummy! I would love to get the recipe for your ritz cracker mint and chocolate cookies!
