p Packing Healthy School Lunches with Veggie Chips 15

Five days a week for the last six months I have packed my daughter a school lunch.  I have struggled to pack healthy options and include fruit and veggies in every lunch.  My daughter loves fruits and veggies but packing veggies are a particular struggle for us.  My daughter does eat her vegetables but she likes most of them cooked and warm.  Which is impossible to send warm veggies to school.  So the only thing my daughter will actually eat is carrots; 2 of them.  Yup.  Only two.

So I have tried to find ways to include healthy options in my daughter's school lunch so that even if she isn't eating a lot of veggies, she is still eating healthy snacks and foods.

One of our favorite items to include in my daughter's lunch, that makes both her and me happy is veggie chips.  My daughter loves having a chip-like snack in her lunch and I love that there are some awesome veggie chip choices out there that provide a better, healthier alternative.

Veggie Chips are kind of like my secret weapon when packing lunches!  (They think they are eating a treat, chips and I know they are getting some vegetables!)

Green Giant recently came out with their own line of veggie chips and so my family was so excited to be able to try them!

We tried these out as an after-school snack recently and my kids were so excited to get chips for a snack!  Chips are a big treat in our house and so I felt better about giving my kids a healthier alternative because I knew these were packed full of healthy ingredients like whole grains and vegetables.

Their Roasted Veggie Tortilla Chips Zesty Cheddar flavor are made with real vegetables and provide 16 grams of whole grains per serving!  And they also taste really good too!  These were definitely my kids favorite ones!

Their Multigrain Sweet Potato Chips are  made with sweet potatoes and have 14 grams of whole grain per serving.  I really liked these chips!  I loved the combination of the sweet flavor plus the hint of sea salt.  Crunchy + Sweet + Salty = Yummy

Plus I can feel better about eating these veggie chips as opposed to regular chips because these do provide some vegetables and a lot of whole grains.

So when I am searching for items to pack in my kids school lunches I often will pack a fun veggie chip like these from Green Giant to help make sure my kids are getting healthier options.

They are yummy! I love the roasted veggie one the best. I even used them in my dinner last night - crushed some up with breadcrumbs on chicken cutlets. 🙂
